What is drying?
Drying is a natural method for preserving foodstuffs based on elimination of the products’ water content. A dried product remains in its unaltered state for a long time, maintaining its organoleptic properties and characteristics intact, perfect for long-term preservation.

How does a Tauro dryer work?
Tauro machines allow fast safe drying thanks to the continuous warm air that flows through the different units and all around the baskets full of sliced food.

Horizontal or Vertical?
The flow dilemma.
Many of the dryers on the market work with a vertical air flow that moves from bottom to top.
The limit of these machines is that the circulating air fills with humidity as it hits the first baskets, carrying the accumulated water towards the upper baskets and preventing correct drying of the products on the top layers.
Another inconvenience of vertical-flow technology is the “blockage” that occurs when products are placed too close together on the lower baskets. Because insufficient air manages to get through the first layers, the products must be spread out, with a consequent waste of space.

Tauro technology has overcome this problem by producing horizontal-flow dryers. With this system the air reaches all the material inside the dryer evenly, flowing above and below the baskets for maximum uniformity of drying times and final results. The material to be dried can also be arranged to completely fill the shelves, without this causing any problems to the air flow.
